RUPFA Trains Over 400 Students and 16 Teachers in Pumpkin Soup Cooking

Rukungiri: Rukungiri Pamoja Farmers Association (RUPFA) has trained over 400 students and 16 teachers in cooking pumpkin soup. The training was held at Rukungiri Universal Primary School in Butagasi Cell, Western Division, Rukungiri Municipality on August 14.

The function was led by RUPFA Project Manager, John Kashobera, who explained that the association empowers school cooks with plant-based skills under the Thrive Africa Vegan Lunch Campaign. He noted that RUPFA is a respected community-based organization championing sustainable crop agriculture, improved nutrition, and animal welfare in Rukungiri.

The training focused on creative, nutritious, and appealing plant-based dishes, with pumpkin soup as a standout example. Rich in vitamin A, fiber, and potassium, pumpkin soup supports children’s eye health, immunity, digestion, and overall vitality, while helping schools reduce reliance on costly animal-based foods.

The Health Inspector of Western Division, Rukungiri Municipality Edward Ndyabahika, added that RUPFA is also committed to training cooks in making tofu and soymilk — nutrient-dense, protein-rich alternatives that are affordable and environmentally friendly.

Project trainer Violah Ankunda highlighted RUPFA’s broader mission of empowering smallholder farmers through sustainable agriculture, crop diversification, and regenerative farming practices. She emphasized the organization’s ethical commitment to promoting plant-based diets, reducing reliance on animal agriculture, and advocating for humane farming methods.

Ankunda revealed plans to extend the program to more schools across Rukungiri, integrate more locally sourced ingredients, and establish peer-learning networks among cooking teams, aiming to make plant-based nutrition a sustainable standard in school feeding.
